Gin & Tonic ice lollies - you won't get these with a Mr Whippy!
  • 100g caster sugar
  • 50 ml water
  • Juice of one lime
  • Handful of raspberries
  • Cucumber slices
  • 200ml tonic water
  • 80ml gin
  • Lolly moulds

Put the water into a small saucepan, add the sugar and gently heat through until the sugar dissolves (do not boil).  Once dissolved leave the mixture to cool completely.  Mix together the gin, lime juice, tonic water and the cooled syrup water.  Into each lolly mould add a raspberry and a slice of cucumber, top up with the lolly liquid and place in to the freezer These are best if left overnight to ensure they are really frozen!  
We were a little greedy and got stuck in after 8 hours and had a bit of liquid dripping all over the place!

Who said lollies had to be for kids? These are so good, got a good kick to them so don't plan on driving anywhere, just what you need given the weather we have been experiencing, definitely ideal for summer, enjoy and cheers! Recipe from Delicious Magazine.

Mac a Tac


Mac a Tac

  • 400g Macaroni
  • 1 portion starter sauce (see The Don Macaroni for recipe)
  • 230g Mature cheddar, grated
  • 90g Monterey Jack, grated
  • 30g Parmesan, grated
  • Handful of chopped green and red jalapeƱo peppers
  • Pulled pork (in most supermarkets you can buy a pack that you heat through in the oven)
  • A handful of chopped fresh coriander
  • 4 tbsp soured cream, to serve
  • Handful of chopped spring onions (the green end parts)
  • 4 small flour tortillas
  • Kankun chipotle sauce
Method:

Cook the pork according to pack instructions, this is usually around 45 minutes in the oven.
  
After around 30 minutes of cooking the pork, bring a large pan of salted water to the boil and cook the pasta according to the pack instructions, until al dente.  Tip into a colander and leave to drain.  Meanwhile, in a heavy bottomed pan make the starter sauce then reduce the heat to low.  Add all the cheese and stir until melted.  Add the drained pasta and stir through.  By the time this is done the pork should be cooked, remove from the oven and shred the pork using two forks, add a few good glugs of the chipotle sauce and mix through. 

Heat your tortillas according to the pack instructions, fill each tortilla with the Mac n cheese, top with the pulled pork, sour cream, jalapeƱos and spring onions and get stuck in.
I warn you though, this can get messy!  If you are somewhat refined, you can serve this in a bowl minus the tortilla.

 As a fan of anything Mac n Cheese this went down a storm in our house and will def be on the make again list soon.  That is my Mac a Tac, get it? Mac and Cheese in a Taco!!
