Mac a Tac
- 400g Macaroni
- 1 portion starter sauce (see The Don Macaroni for recipe)
- 230g Mature cheddar, grated
- 90g Monterey Jack, grated
- 30g Parmesan, grated
- Handful of chopped green and red jalapeƱo peppers
- Pulled pork (in most supermarkets you can buy a pack that you heat through in the oven)
- A handful of chopped fresh coriander
- 4 tbsp soured cream, to serve
- Handful of chopped spring onions (the green end parts)
- 4 small flour tortillas
- Kankun chipotle sauce
Method:
Cook the pork according to pack instructions, this is usually around 45 minutes in the oven.
After around 30 minutes of cooking the pork, bring a large pan of salted water to the boil and cook the pasta according to the pack instructions, until al dente. Tip into a colander and leave to drain. Meanwhile, in a heavy bottomed pan make the starter sauce then reduce the heat to low. Add all the cheese and stir until melted. Add the drained pasta and stir through. By the time this is done the pork should be cooked, remove from the oven and shred the pork using two forks, add a few good glugs of the chipotle sauce and mix through.
Heat your tortillas according to the pack instructions, fill each tortilla with the Mac n cheese, top with the pulled pork, sour cream, jalapeƱos and spring onions and get stuck in.
I warn you though, this can get messy! If you are somewhat refined, you can serve this in a bowl minus the tortilla.
